Phytochemicals have been highlighted in several sectors of industry due to their different biological activities. In fact, the curcumin is a polyphenol extracted from rhizome turmeric (Curcuma longa) consumed form kitchen spices since ancient times which it has demonstrated beneficial health effects such as antioxidant, anti-inflammatory, anti-carcinogenic, anti-tumor, and so on. However, concentration bloodstream very low its high hydrophobicity, absorption intestinal physiological conditions, metabolism rate liver, rapid excretion by gallbladder. Poor bioavailability limited bioactivity phytochemical. Efforts made improve upon this using chemical modification encapsulation approaches. Considering versatility, safety, biocompatibility, technologies more effective improved dispersibility, stability, bioavailability, phytochemicals vivo vitro assays. Therefore, chapter focused on aspects involved (e.g., solubility, food matrix effects) phytochemical with great potential for cancer neurodegenerative diseases chemopreventive effect. We also strategies used enhance based resulting nanoparticle drug delivery systems. Curcumin, a polyphenol extracted from Curcuma longa L. with variety of biological and pharmacological activities, has been identified as promising photosensitizer for food sterilization.
