ABSTRACT Escherichia coli ( E. ) O157: H7 is a critical pathogen due to its association with severe conditions like hemorrhagic colitis and hemolytic uremic syndrome. The prevalence of this underscores the urgent need for effective food environmental safety measures. Among emerging innovations, aptamer‐based biosensors (aptasensors) offer increased sensitivity reduced detection times compared traditional methods identifying H7. Aptamers, short single‐stranded DNA (ssDNA) or RNA molecules, act as bio‐recognition elements, exhibiting high specificity affinity foodborne pathogens. This scoping review examines recent advancements in aptasensor technology over past 5 years, focusing on platforms targeting detection. Key elements such targets, sample types, transducers, sensing mechanisms, fabrication methods, limits were analyzed identify strengths limitations current platforms. findings indicate that most optical aptasensors, particularly fluorescence‐based ones, have been developed detecting water, food, milk samples. Currently developing aptasensors show promise, offering reliable alternatives improved capabilities. Nonetheless, further studies are still needed validate their facilitate broader applications. explores latest developments across diverse including electrochemical, optical, magnetic approaches, working principles, advantages, limitations. It highlights potential practical applications agricultural samples, emphasizing role advancing monitoring systems.
