Deep eutectic solvents (DESs) are multicomponent designer that exist as stable liquids over a wide range of temperatures. Over the last two decades, research has been dedicated to developing noncytotoxic, biodegradable, and biocompatible DESs replace commercially available toxic organic solvents. This study investigated a methodology for the extraction of major anthocyanin from Korean black raspberries (KBR) using green chemistry. Ternary natural deep eutectic solvent (NADES) used in this consisted choline chloride, malic acid, and 1,4-butanediol (2:1:1; w/w/w) based on viscosity total contents. The interaction between components ternary NADES their characteristic functional groups were confirmed infrared spectroscopy. optimized conditions Box–Behnken design response surface as follows: temperature 26.6 °C, time 15.2 min, NADESs water content 23.3% (v/v). efficient efficiency storage stability cyanidin-3-O-glucoside (C3G) determined.
