Food safety is of great concern, and food-borne bacterial infections diseases are a major crisis for health. Therefore, it necessary to develop rapid detection techniques the prevention recognition food hazards caused by pathogens. In recent years, fluorescence assay has become widely utilized method due its good signal amplification effect, high sensitivity, stability, short time. this review, different kinds materials were concentrated, including quantum dots (QDs), carbon (CDs), metal-organic frameworks (MOFs), upconversion nanoparticles (UCNPs). The optical properties applications fluorescent analyzed compared. Furthermore, according biosensing components, biosensors reviewed, label-free based probes, aptamer-based biosensors, antibody-based biosensors.
