Antibacterial coatings have emerged as an innovative solution to reduce postharvest losses and extend the shelf life of perishable food products, particularly fresh fruits vegetables prone microbial decay during storage, handling transportation. These create a protective barrier while actively suppressing spoilage microorganisms, thereby preserving nutritional value, safety, quality, with enhanced storability. This review examines recent advancements in antibacterial coating technologies, highlighting specific effectiveness materials such chitosan for its broad-spectrum antimicrobial properties, pectin synergy natural additives, bio-based polymers like alginate gum arabic their biodegradability. Active agents, including zinc oxide nanoparticles (oxidative stress induction), titanium dioxide (photocatalytic activity), nanocomposites (enhanced durability), are also critically evaluated. Beyond control, these regulate physiological processes moisture retention respiration, enhancing storability under various conditions. The underscores relevance technologies key stakeholders, growers, distributors, consumers, by reducing waste, sustainability, ensuring security. By synthesising current findings, this work identifies practical applications knowledge gaps, offering insights into role sustainable, cost-effective approach addressing challenges vegetables.
