The present work aimed to optimize an active pectin-based coating preserve microbial and enzymatic stability maintain the quality parameters of white button mushrooms (WBM), thus increasing their shelf stability. D-optimal mixture design was implemented study effect pectin (X1), ascorbic acid (X2), ethylene-diamine-tetra acetic (EDTA) (X3) on polyphenol oxidase (PPO) inhibition, browning index, total phenolic content. optimal a 2.55% w/v pectin, 0.67% acid, 0.78% EDTA. Further, optimally coated WBM stored for 6 days at 20 ± 1°C. significantly prevented growth natural microflora in sample. Similarly, maximum 84% PPO inhibition achieved end storage period. A minimum index (BI) 66 observed after six storage, lower than that uncoated sample with BI 72.72 0.90. Maximum content 10.23 mgGAE/g (dry basis) preserved till day 6, while antioxidant capacity 7.16 0.20 mg GAEAOC/g basis). Based safety overall parameters, EDTA-enriched led shelf-life 4 against 2 20°C. optimized resulted competitive PPO. Fourier transform infrared (FTIR) spectroscopy revealed EDTA modulated secondary structure conformation amide I region.
