ABSTRACT This article presents an in‐depth review of the role volatile organic compounds (VOCs) in food authentication, area increasing importance due to rising complexity fraud cases. The inherent and unique profiles VOCs different products serve as chemical fingerprints, enabling differentiation authentic from fraudulent ones across various categories such dairy, fruits, vegetables, meat, seafood, beverages, grains. begins with overview properties characteristics VOCs, emphasizing their diversity significance sensory experience products. explores VOCs' application providing valuable information on origin, variety, quality, ripening stage, potential adulterations.
