Abstract Flavonoids are a major class of polyphenolic compounds that occur naturally in plants and widely distributed various dietary products. exhibit prominent physicochemical properties biological activities, thereby garnering considerable attention. Notably, the functionalities flavonoids structurally dependent. Variations chemical structure lead to differences characteristics among different flavonoid types. Structural alterations can modify these characteristics, influencing activities mechanisms action. However, structural variations their implication have not been comprehensively elucidated. In this review, we outline flavonoids, discuss biosynthesis, vivo digestion, absorption, particularly emphasize diverse action associated with structures. By summarizing current scientific findings, aim elucidate structure–activity relationships provide theoretical basis for development new applications, which will help target design functional molecules moieties food pharmaceutical industries use drug development. Practical Application : Understanding guide products supplements targeted health benefits. leveraging knowledge relationships, food, innovate formulations enhance bioavailability efficacy, potentially leading creation tailored specific conditions or needs.
