Chestnut (Castanea sativa) shells (CS) are an appealing source of antioxidants. In previous studies, the research team validated a nutraceutical extract from CS, recovered by eco-friendly technology, in-vitro and in-vivo assays, developed functional cookies enriched with this extract. This study attempts, for first time, to investigate impact gastrointestinal digestion in phenolic composition, bioaccessibility, antioxidant/antiradical properties, α-amylase inhibition CS extract-enriched cookies. Diabetes induced mice with a single intravenous injection alloxan (75 mg kg−1). Chronic non-communicable diseases are the major cause of death globally. Whole grains recommended in dietary guidelines worldwide due to increasing evidence that their consumption can improve health beyond just providing energy and nutrients. Epidemiological studies have suggested incorporation whole grains, as part a healthy diet, plays key role reducing one's risk for cardiovascular (CVDs), obesity, type 2 diabetes (T2D) cancer. Phenolic acids fibre important components found largely responsible these advantages. Both phenolic fibre, which predominantly present bran layer, abundant whole-grain cereals pseudo-cereals.
