Metal-Organic Frameworks (MOFs), a relatively new category of materials which came into attention about two decades ago, have caught researchers across industrial sectors including food additives, flavor, packaging and sensing. More than 100,000 such structures been synthesized, approximately 500,000 theoretically determined. However, most these are synthesized using transition metal ions petroleum derived ligands creates cytotoxicity sustainability related concerns, respectively. Additional challenges with MOFs include thermal, moisture, hydrothermal stability as well pH sensitivity, reusability scalability. To mitigate the environmental, toxicological utilized bio-compatible edible linkers polyphenols, cyclodextrins, peptides, amino acids etc. linked non-toxic cations endogenous/intercellular Zn2+, Fe2+, Fe3+ Mg2+, Ca2+, K+ among others. Other factors hinder real-life applications thermal or stability, application medium, food-contact concerns. This paper systematically provides an overview various coordination ability, acid dissociation constant bond orbitals others links them to reusability. Various made from edible, biocompatible, biological endogenous suitable for food, contact identified. Structure, porosity physical properties MOF families summarized.
