Indigenous forest foods have great potential to diversify cropping systems and increase food security the resilience of climate change. Underutilised indigenous tree nuts in particular can provide health benefits local communities improve livelihoods when commercialised. However, for many nut species, there is little knowledge important kernel characteristics. Kernel size oil composition are factors commercialisation benefits, respectively. We assessed attributes Terminalia catappa L. (Combretaceae), a traditional Pacific, Solomon Islands, Vanuatu Fiji. mass kernel-to-fruit ratio, explored fatty acid profile oil, stability against oxidation using accelerated ageing at 45 °C 21 days. The largest kernels were found Islands with an average 1.66 g. Similarly, ratios higher than contained concentrations unsaturated acids saturated acids. Among acids, oleic linoleic two most abundant. Kernels incubated exhibited significantly hexanal on day 7 compared those 0 incubation. This rapid may be associated high kernels. These findings implications shelf life. Our study suggests T. trees from exhibit desirable characteristics that make them suitable selection commercialization. commercialization underutilised like will enhance nutrition communities.
