From a selection of seven traditional and 14 innovative alheiras, 491 lactic acid bacteria (LAB) were isolated tested for their antimicrobial activity against several food-borne pathogens. Among these, six strains revealed through potential bacteriocin production Listeria monocytogenes strains, Enterococcus faecalis ATCC 29212, Clostridium sporogenes ESB050, perfringens ESB054. Through whole genome sequencing (WGS), these identified as Lactiplantibacillus plantarum (2), Leuconostoc mesenteroides (1), Pediococcus acidilactici (3). Furthermore, orthologues class II bacteriocins genes identified, including Plantaricin E, F, Pediocin PA, Enterocin X, Leucocin A, Coagulin A. No virulence or antibiotic resistance genes' detected by WGS analysis. However, the selected LAB showed variable phenotypic patterns related to when assessed classical methodologies. None demonstrated biogenic amines, gelatinase DNase. Additionally, no hemolytic lipase enzyme was observed. only Lpb. 9A3 sensitive all antibiotics thus chosen further examination.
