The globe cultivation and industrial production of quinoa have been steadily increasing. Nevertheless, the full potential quinoa’s nutritional economic benefits remains underexploited. This study investigates isolation purification active protein (QAP) through precipitation method using ammonium sulfate from a phosphate extraction solution. process involved gel filtration chromatography with Sephadex G-75 G-50 columns to obtain QAP fractions exhibiting inhibitory effects against Candida albicans ( C. ). ABSTRACT Interest in plant‐derived bioactive peptides (BAPs) is increasing due to their potential therapeutic effects, low toxicity, abundance, scalability, and cost‐effectiveness. These can be obtained by hydrolyzing plant proteins from a diverse range of sources, including legumes, cereals, grains, oilseeds, tubers. Ginger (Zingiber officinale) is widely recognised for its functional benefits, primarily attributed to diverse phytochemicals. However, proteome remains largely unexplored. This study hypothesised that isolated peptides may exhibit different bioactivities or more targeted mechanisms of action and could be investigated at a molecular level. Proteins were enzymatically hydrolysed under five conditions, identified using LC-MS/MS. In silico screening suggested antioxidant, ACE-inhibitory, antibacterial properties, further assessed through docking in vitro validation. 41 potentially bioactive identified. assays confirmed these properties selected peptides, P1 (GSPVWIIPEPT), P2 (FASYPVKK), P3 (GPEKIFYDGPYL), P4 (IAISPSYPIK). Notably, exhibited potent mixed-type ACE-inhibition bacteriostatic effects. Molecular provided mechanistic insights into interactions.
