Shrinkage has a negative impact on drying efficiency and quality. However, insufficient information about the effect of shrinkage kinetics hampers comprehension underlying mechanism. This study aimed to assess the correlation between moisture migration and texture, as well viscoelasticity of Chinese yam during evaporation stage multiphase microwave drying (MMD).
