Industrial pectin production from citrus peels involves extended, multi-step acidic extraction at elevated temperatures. Pectin quality can be improved by reducing the time or number of steps, but this comes expense yield. A decrease in yield revenue may compensated for developing new usage partially depectinized residues. One option is to capitalize on fucosylated xyloglucans present Thus, aim work was maximize gentle xyloglucan peel residues orange and lemon examine effects quality. All preparations, being multicomponent enzyme blends, induced partial degradation simultaneously depolymerization; lowest dosage CTec2 (100µL/g DM, 40 °C, pH 7.0) resulted highest yields solubilized 53% 39% respectively.
