Tomato seed protein isolate (TSPI) (3, 4, and 5 g) was used to form protein-based edible films. The incorporation effect of glycerol (GLY) (35, 42.5, 50% w/w based on the dry weight TSPI) tragacanth gum (20% characteristics TSPI films investigated. Response surface methodology (RSM) using a central composite rotatable design predict effects GLY concentrations responses. experimental data were adequately fitted into linear model for all variables examined. optimum 3.925 g 35% TSPI, respectively. Under this condition, resulted in opacity (14.17), water solubility (48.07%), vapor permeability (1.355 mm/kPa h m2), total color differences (52.33), tensile strength (3.5 MPa), elongation at break (6.582%), L* (63.60). exhibited semicrystalline nature, which proved by results SEM XRD analysis. Fourier transform infrared spectroscopy (FTIR) showed presence strong hydrogen bonding between chains glycerol. that had good film-forming capacity, creating homogeneous film with physiochemical properties.
