Scientific studies reported that most vegetarians meet the total protein requirements; however, little is known about their amino acid intakes. Background The role of leucine in sarcopenia prevention remains unclear. We aimed to summarize the published data from randomized controlled trials (RCTs) estimate effect supplementation on sarcopenia-related measures older adults. Aquafaba, the cooking water of chickpeas and other pulses, is used as a vegan egg white substitute because its favorable technofunctional properties. Nonetheless, application often restricted by "beany" flavor poor foaming properties compared to white. To overcome these limitations, aquafaba was fermented with two edible basidiomycetes. Background/Objectives: The quality and composition of dietary proteins are crucial during growth, particularly in children who follow vegetarian diets. Branched-chain amino acids (BCAAs: leucine, isoleucine, valine) lysine play essential roles muscle repair, metabolism involved the regulation muscle-derived known as myokines. Results: Vegetarian showed significantly lower intakes total protein, animal than omnivores. Correspondingly, valine, albumin reduced vegetarians. Among myokines, serum myostatin myonectin comparable between groups, but had median FSTL-1 7.7 (6.5-9.4) ng/mL omnivores 9.7 (7.5-13.9) (p = 0.012). Abstract High-protein diets have gained popularity for weight management; however, concerns persist regarding increased meat protein intake. This study explored the potential of egg white noodles (EWN) as a novel substitute, utilizing advanced encapsulation techniques to enhance their functional properties. An isocaloric diet with high proportion including 30% replacement by EWN was provided overweight and obese participants 6-week intervention period, 2-week follow-up period without test meals. The results demonstrated significant reductions in body weight, Body Mass Index (BMI), waist hip circumferences, fat mass group while maintaining muscle compared baseline. However, these effects did not significantly differ from those observed control group. By week 6, change notably greater (-2.64 ± 0.45 kg) than (-1.48 0.26 kg). waist-to-hip ratio lower 3.
