Scope This study evaluates the potential of bioconverted garlic ferments (BGFs) to stimulate intestinal immune system and modulate cecal microbiota composition. Methods results In vitro, BGF significantly enhances Peyer's patch (PP)‐mediated bone marrow cell proliferation increases production interferon‐gamma (IFN‐γ), granulocyte macrophage‐colony stimulating factor (GM‐CSF), interleukin (IL)‐6, immunoglobulin A (IgA) but not IL‐4, IL‐5, E (IgE). Oral administration C3H/HeN mice for 4 weeks GM‐CSF (42.1–45.8 pg mL −1 ) IFN‐γ (6.5–12.1 levels in PP cells. also elevates tumor necrosis factor‐alpha (TNF‐α, 165.0–236.3 mg ), (2.4–3.0 ng (1.5–3.2 small fluid, TNF‐α (2.2–3.1 (10.3–0.21.5 mouse serum. Cecal microbial analysis reveals that Bacteroidota Verrucomicrobiota decreases Actinobacteria Bacillota at phylum level mice. At genus level, abundance Fusimonas (250 kg BW day Bacteroides (125 250 Akkermansia Bifidobacterium (62.5 Limosilactobacillus ). Conclusion provides first evidence BGF's ability gut microbiota, supporting its as a novel functional material enhance immunity.
