Abstract Background Due to their environmentally friendly character, entomopathogenic fungi (EPF) are becoming increasingly used as microbial agents in biological pest control over chemical pesticides. However, EPF sensitive the influence of abiotic factors, such temperature, radiation, and humidity. To improve efficiency bioinsecticides, this work, development a new microparticles-based formulation loading conidia ( B. bassiana aerial conidia) into sodium alginate/maltodextrin microparticles obtained by spray-drying was proposed. Different concentrations both polysaccharides were tested reach optimal ratio ensure high viability encapsulated conidia. Results All produced formulations showed moisture content < 10% water activity (aw) 0.4. Microparticles with 2% alginate 8% maltodextrin able retain 89.5% conidia, thus being selected for further characterization. Abstract Pestil, also known as fruit leather, has emerged a promising non‐dairy carrier for probiotics, utilizing apricots and incorporating probiotics into its formulation. This study aimed to develop healthy snack bar by three distinct strains of probiotic bacteria, both in free encapsulated forms, the recipe apricot leather. The physicochemical, bioactive, microbiological, textural attributes resulting pestils were evaluated over 120‐day storage period. Fluctuations pH (4.74–4.97) observed during storage, whereas water activity (0.31–0.45) moisture content (8.05%–13.40%) exhibited decreasing trend time. The use of lactic acid bacteria (LAB) for the biocontrol fungi that cause fruit and vegetable deterioration is a highly promising strategy. However, one main challenges lies in maintaining both viability antifungal activity even conditions are unfavorable LAB. microencapsulation LAB can minimize impact environmental conditions, helping to maintain viability, but there still little information on what occurs with respect activity. Therefore, objective this study was evaluate effect several polymer blends Lactiplantibacillus plantarum TEP15 L. pentosus TEJ4. Sodium alginate (2%), sodium alginate–gum arabic (2%:1%), alginate–k-carrageenan (2%:0.05%), alginate–whey protein (0.75%:1.5%) were used as encapsulating polymers. After processing (day 0), well after 14 28 days storage, encapsulation efficiency, moisture content, bead size, survival evaluated. Likewise, encapsulated subjected vitro tests against Colletotrichum gloeosporioides, Penicillium AT21H10, Fusarium sp. The aim of this study was to produce a functional and low-calorie ice cream by incorporating oleaster flour (OF) into the mix formulation at different ratios as milk powder and/or sugar substitute. also probiotificated supplementation Lactiplantibacillus plantarum NRIC 1838, thus preparing symbiotic ice-creams. For purpose, 8 ice-cream formulations were designed their physicochemical, bioactive, microbiological, thermal sensory properties analyzed. results showed that dry matter content, pH values total phenolic content creams in range 43.78-46.59 %, 5.65-6.38, 0.25-0.94 mg GAE g-1, respectively. Abstract This study was aimed to optimize nanoencapsulation conditions of ovalbumin (OV)‐nettle seed gum (NSG)‐chitosan (CS), ONC‐based nanocarriers, using response surface methodology (RSM). Then, wheat germ oil (WGO) encapsulated in optimized ONC and WGO‐loaded nanocarriers were characterized for their encapsulation efficiency, zeta potential, average particle size, emulsion stability, thermal, structural, micromorphological, rheological, cytotoxic properties. The results showed that NSG‐CS amount 30 mL, OV 20 pH 3 gave the maximum potential minimum size based on predicted production by RSM. Encapsulation efficiencies nanoparticles (WGONs) containing different ratios WGO (2.5% 4.5%, v:w) ranged from 48.66% 71.91%. According rheological properties, both solutions complex WGONs exhibited Newtonian flow behavior. FT‐IR spectra changes peaks associated with amino carboxyl groups following WGO, suggesting successful completion process. SEM images revealed addition into capsule resulted formation rough particles. cytotoxicity tests demonstrated concentrations CS, NSG, OV, ONC, WGON up 10 mg mL –1 did not significantly reduce viability L‐929 human fibroblast cell lines, indicating nontoxicity toward healthy cells.
