This
paper
provides
an
overview
of
the
various
applications
bioactive
compounds
found
in
S.
rosmarinus.
at
present.
Additionally,
it
explores
emerging
technologies
for
its
extraction,
such
as
ultrasound,
which
is
effective,
fast,
and
sustainable
technology
obtaining
these
secondary
metabolites
from
this
millenary

applications.

this
context,
the
emergence
of
deep
eutectic
solvents
(DESs)
is
expected
to
help
address
growing
demand
innovative,
efficient,
and
more
sustainable
methods
NPs
extraction.
DESs
are
designer
that
provide
higher
yields
enhance
activity
extracted
phytochemicals
compared
with
conventional
volatile
organic
solvents.
Antioxidant
naturally
occurring
molecules
can

DESs,

as
hydrogen
