The use of Paracoccus carotinifaciens-derived natural astaxanthin as an alternative to synthetic has attracted considerable attention from the aquaculture industry. Furthermore, enhance bioavailability astaxanthin, its "Z-isomerization" been actively studied in recent years. This study investigated effects feeding a diet containing rich all-E- or Z-isomers derived P. carotinifaciens on pigmentation and concentration rainbow trout (Oncorhynchus mykiss) flesh. Z-Isomer-rich was prepared all-E-isomer by thermal treatment fish oil, all-E-isomer-rich (E-AST-D; total Z-isomerratio = 9.1%) Z-isomer-rich (Z-AST-D; Z-isomer ratio 56.6%) were fed for 8 weeks. Z-AST-D resulted greater accumulation efficiency flesh than those E-AST-D. Specifically, when E-AST-D trout, SalmoFan score 22.1±1.4 1.36±0.71 μg/g wet weight, respectively, whereas fed, their values 26.0±2.5 5.33±1.82 respectively. These results suggest that Z- isomers isomerization are more bioavailable all-E-isomer.
