ABSTRACT Longjiang brine's complex composition challenges traditional empirical optimization methods. This study developed an artificial neural network coupled with multi‐objective genetic algorithm (ANN‐MOGA) to simultaneously optimize flavor compounds, color parameters, and brining process. Validation experiments were conducted assess the application from perspective of color, flavor, taste brined pork. The results showed that single‐objective group used 2.24% dried galangal, 1.38% food caramel, 4.22 h time. After MOGA optimization, parameters adjusted 2.57% 1.10% 4.41 optimized pork exhibited significant improvements, including score increased by 5.32%, 9.69%, 4.87%, overall acceptability 9.10%. validation indicated ANN‐MOGA can be as effective tool formulation process brine, making it a useful for in various brine systems.
