Ferulic acid is a widespread phenolic compound that occurs in seeds and leaves, both its free form conjugated to polysaccharides, carbohydrates, glycoproteins lignins the plant cell walls. It exhibits various biological activities, like antioxidant, anticarcinogenic, anti-inflammatory, hepatoprotective, antimicrobial, antiviral activity, it modulates enzyme activity. Given these wide potential health benefits, ferulic has attracted considerable research interest may be considered biomolecule with strong prospects as functional food ingredient. Great attempts have been made enhance extraction process recovery from natural matrices agro-industrial wastes for applications relating human nutrition. This review presents recently available information on methods quantifying different samples, along bioavailability stability processing foods activities.
