In this study, we aimed to evaluate the economic, environmental, and social viability of enzymatic hydrolysis process for food waste valorization by applying cost-benefit analysi (CBA). Our research was based on investigation three scenarios/alternatives final product production bioethanol, bioactive peptides, organic acids. Key economic indicators, such as cost/benefit ratios, net present value (NPV), internal rate return (IRR), were used financial performance. At end CBA, a sensitivity analysis conducted highlight performance each scenario under varying conditions, including fluctuating costs, benefits, discount rates. These results indicate that offers significant opportunity reducing its environmental impacts promotes sustainability. Bioactive peptide found be most environmentally viable option, offering highest efficiency. both optimistic pessimistic scenarios analysis, revealed is economically viable, while other alternatives, bioethanol acid production, are more sensitive operational changes. This study hydrolysis, evaluated through impactful method management. It reduces impacts, enhances sustainability, aligns with principles circular economy. The adoption innovative management strategies considered essential building sustainable resource-efficient system.
