In this review, I would like to summarize some recent innovations in the analysis of wheat quality, illustrated with a few examples. After brief history main targets that have driven selection up present day, grain yield, protein content and will explain why studies relating characteristics quality (which appears be compromise many different properties: technological, sanitary, nutritional, sensory, economic) are complex how entire production chain may impact final product. then illustrate developments focus on relationships between flour properties, notably through non-destructive methods, molecular probes, "omic" studies, as well miniaturization characterization processing tools, multi-scale data management. Finally, identify possible future directions better understand, improve, or predict product quality.

Aflatoxin M1 (AFM1) contamination in milk and dairy products poses a significant global concern due to its severe health risks humans. Sensitive specific detection of AFM1 has emerged as the most effective strategy for mitigating these risks. Aptamers are regarded ideal biorecognition elements monitoring owing their small size, ease production, excellent affinity specificity, high stability, low immunogenicity. Corn-based breakfast cereals, known as cornflakes, have become a common choice worldwide, recognized for their convenience and versatility. However, mycotoxins can contaminate these products, adversely affecting human health. This study assessed the occurrence of major (AFB1, OTA, DON, ZEA, FUM) in cornflake stock-keeping units (SKUs) marketed United Arab Emirates (UAE). It also evaluated effect different independent variables (country origin, temperature on production day, storage time, presence chocolate, bran, nut ingredients) estimated exposure levels UAE population to associated risk factors. Seventy-six distinct SKUs were identified through market screening tested using Enzyme-Linked Immunosorbent Assay (ELISA) technique. AFB1, FUM, DON detected 23.7, 48.7, 27.6, 9.2 88.2% samples, respectively. The mean concentrations among positive samples 2.0, 1.0, 10.14, 584.9, 90.6 μg/kg, Except average mycotoxin below established limits by European Union (EU). Among none exceeded US FDA all mycotoxins, only one CODEX limit FUM. A novel solid-phase extraction methodology followed by UHPLC-MS/MS has been developed for Ochratoxin (OTA) analysis in herbal infusions. For this purpose, a commercial polyurethane foam (PUF) was used as sorbent, and the experimental conditions were fully optimized.
