An active coating made of carboxymethyl cellulose (CMC) and flaxseed mucilage (FM) in equal amounts (1:1), along with various levels nanoencapsulated burdock extract (NBE) ranging from 0 to 0.75 (g/g dry matter), was found enhance the quality fresh-cut potatoes (FCP) fried (FP). Two groups samples were treated: one stored a refrigerator (5 °C 65% humidity) for 9 days, while other 5 min at 170 °C. The FTIR analysis revealed physical contact between nanocapsules biopolymers without any new chemical bonding. During cold storage, weight loss (from 1.23-3.56 2.84–10.54 g water/g product) softening FCP tissue reduced. antioxidant activity (AA) is maintained by preserving phenolic compounds vitamin C. For coated FP, helped maintain moisture, reduced oil uptake prevented formation acrylamide about 0.63 folds. overall findings demonstrated that FM CMC, including 2 or 3 NBE/g matter, can be utilized improve potato shelf life as well assure safety potatoes.

The development of innovative, biodegradable food packaging materials to combat plastic pollution has garnered significant attention from scholars and government agencies worldwide. Natural polysaccharides proteins exhibit excellent modifiability, biodegradability, high ductility, compatibility with products, making them ideal candidates for constructing hydrogels. Hydrogel films based on these biopolymers have opened new research horizons in applications.
