Purpose The objective of this study was to evaluate the effects digital maturity has on agricultural firms’ sustainable (environmental, social and economic) performance. The purpose of the present study was to evaluate physicochemical characteristics and protein profile a vegan dressing made from flax (Linum usitatissimum), soybean (Glycine max), lupin (Lupinus mutabilis), promote development this type product with significant nutritional characteristics. For purpose, three treatments five repetitions formulations were developed. In addition, an ANOVA Tukey's test at 5% significance used interpret results protein, fat, pH. values for proposed ranged 2.71 - 5.68 %, fat: 52.40 54.10 pH: 4.10 4.37. Formulation 1 contains highest levels flour flaxseed meal compared other two (Soy Beverage 22%, Lupin Flour 9%, Flaxseed Meal 8%) stood out content (5.68 %), fat (54.10 %) pH (4.37). Subsequently, treatment resulting in higher proportion following amino acids: glutamic acid (2.21 g), threonine (0.93 aspartic (0.90 g). dressing's profile, 5.68% total highlights essential non-essential acids, including Glx Asx, derived hydrolysis, showcasing potential meal. Thus, microbiological quality determined using as reference Sanitary Technical Standard (NTS), obtaining molds (20 CFU/g), yeasts (10 coliforms (< 10 CFU/g).
