Zusammenfassung Als eine vielversprechende Quelle für bioaktive pflanzliche Sekundärstoffe gelten Keimsprossen von Kreuzblütlerpflanzen (Familie: Brassicaceae). Vor allem das in Brokkolisprossen höheren Konzentrationen vorkommende Glucoraphanin ist als bioaktiver Naturstoff besonderer Bedeutung. gehört zur Stoffklasse der Glucosinolate (Senfölglucoside) und stellt Prodrug Sulforaphan (1-Isothiocyanato-4-methylsulfinylbutan) dar, zahlreichen Studien antikarzinogene bzw. chemopräventive Effekte gezeigt werden konnten. Zur Optimierung täglichen Aufnahme Glucosinolaten wird die eigene Anzucht Sprossen immer beliebter Vielzahl diesbezüglicher Brokkoli-Keimsaaten hierfür heute am Markt verfügbar. In diesem Zusammenhang wurden vorliegenden Studie Glucosinolatmuster 48 handelsüblichen Kreuzblütlersamen untersucht, davon Hälfte (24 Proben) mit Deklaration „Brokkoli“. 15 untersuchten Samenproben konnte deutlichen Mengen nachgewiesen werden. Lediglich 9 dieser Samenmuster stammen laut Brokkoli, alle übrigen leiten sich anderen Varietäten Stamm-Art Brassica oleracea ab. Dies analytisch eindeutig über jeweiligen Glucosinolat-Fingerprints mittels U(H)PLC CE belegt Die Ergebnisse belegen, dass vielen Fällen (15 24 trotz „Brokkoli“ untersuchte Saatgut kein Brokkoli typisches Glucosinolatprofil nachweisbar nur wenig oder bestimmbar war. Verbraucher Patienten unbefriedigende Situation bewertet.

This article presents a general overview of scientific publications in the field microgreens using bibliometric tools. Data were collected from Web Science database (from Clarivate Analytics) period 2004 to 2023, covering 20 years publications. The results are presented form tables, graphs, and charts analyze development countries with greatest influence on topic USA, Italy, India, which have highest number analyzed 133, 76, 38 publications, respectively. The aim of this study was to compare the concentration phenolic compounds, glucosinolates, proteins, sugars and vitamin C between kohlrabi (Brassica oleracea var. acephala gongylodes), Savoy cabbage (B. sabauda), Brussels sprouts gemmifera), cauliflower botrytis), radish (Raphanus sativus) garden cress (Lepidium sativum) microgreens for their antioxidant hypoglycemic potential. Growing microgreens on trays without substrate in a vertical multilayered growing unit offers several advantages over traditional agriculture methods. This study investigated the yield performance and nutritional quality of five selections radish grown sprouting trays, using only water, an indoor multilayer cultivation system artificial light. Various parameters were measured, including fresh weight, dry matter, chlorophyll, minerals, amino acids, phenolics, flavonoids, anthocyanins, vitamin C, glucosinolates, antioxidant activity with four different vitro assays. After ten days, biomass had increased by 6-10 times, matter varied from 4.75-7.65%. The highest was obtained 'Asia red', while lowest 'Koregon red'. Abstract. Microgreens, the young seedlings of edible plants, have gained attention for their potential health benefits and culinary applications. This newly emerging functional food crop has to sustainably diversify global systems, facilitate urbanization climate change responses, advance human health. However, reception among school students remains an understudied area, particularly in Malaysian context. In this study, five microgreens species including ulam raja, red amaranth, radish, daikon, corn were evaluated sensory perception acceptability secondary Selangor, phytochemical compositions. Among species, exhibited highest intensity sweetness, raja demonstrated a strong aroma bitterness, while radish was notable its astringency heat. Red amaranth had grassy taste, all low score sourness. Corn rating on flavor overall eating quality, signifying favorable impression students. Conversely, received lowest scores both categories.
