Determination of Heavy Metal Levels and Assessment of L. monocytogenes and Salmonella spp. Presence in Fishery Products and Mussels from the Marmara Region, Türkiye

This
study
evaluated
heavy
metal
levels
(Pb,
Cd,
Hg,
As,
Cu)
and
the
presence
of
Salmonella
spp.
Listeria
monocytogenes
in
mussels
commonly
consumed
fishery
products
from
Marmara
region
Türkiye.
Health
risks
were
using
total
hazard
quotient
(THQ)
index
(HI)
values,
while
microbial
fresh
ready-to-eat
(RTE)
estimated
via
Risk
Ranger
tool.
Among
625
samples,
Hg
(36.96%;
CI95
=
33.27–48.81),
Pb
(9.76%;
7.67–12.34),
Cd
(19.36%;
16.45–22.64)
exceeded
permissible
limits,
except
crabs,
which
remained
compliant.
Anchovy,
sardines,
bluefish,
shrimps,
octopus
met
EU
limits.
Shrimps
exhibited
higher
Asin
than
crabs
(p
<
0.05),
squids
had
significantly
but
lower
0.05).
Microbiological
analysis
detected
4.00%
samples
(CI95
2.50–6.30)
L.
4.24%
2.70–6.59).
Surmullet,

mullet,

With
the
rapid
industrialization
and
urbanization
of
coastal
areas,
marine
pollution
(such
as
heavy
metals)
is
increasingly
contaminating
environment,
posing
significant
public
health
risks.
Eastern
Guangdong,
a
key
aquaculture
fisheries
hub
in
China,
has
growing
market
for
aquatic
products.
Heavy
metals
persist
environment
are
difficult
to
degrade
bioaccumulate
organisms
through
food
web,
presenting
carcinogenic
mutagenic
risks
humans,
top
predators.
This
study
analyzed
10
species
commonly
consumed
by
residents
eastern
Guangdong
(bivalves,
crustaceans,
fish),
measuring
concentrations
six
(As,
Cd,
Cr,
Cu,
Ni,
Pb)
using
inductively
coupled
plasma
mass
spectrometry
(ICP-MS).
Pollution
levels
were
assessed
index
(Pi),
dietary
exposure
evaluated
via
target
hazard
quotient
(THQ)
different
age
groups.
Results
showed
that
Pi
values
all
within
normal
background
levels,
but
bivalves
had
high
capacity
Cd
accumulation,
with
severity
ranking
>
crustaceans
fish.
The
THQ
both
adults
teenagers
<1
across
samples,
indicating
no
risk
residents.
However,
TTHQ
Sanguinolaria
sp.
exceeded
1,
potential
highlights
consuming
metal-contaminated
products,
particularly
bivalves.
