This study aimed to assess the effects of a diet containing 20.8 mg FB1 + FB2/kg over four and nine days on oxylipin (OL) profiles in liver brain chickens. A total 96 OLs, derived from seven polyunsaturated fatty acids (PUFAs) via cyclooxygenase (COX), lipoxygenase (LOX), cytochrome P450 (P450), non-enzymatic pathways, were measured using HPLC-MS/MS. In liver, significant increase epoxide P450-derived OLs was detected by day 4, with smaller but notable increases COX- LOX-derived 9. These alterations independent whether parent PUFA ω6 or ω3.
