The enzymatic modification of proteins using protein hydrolase preparations to prepare bioactive peptides has been widely used in the food industry. Endogenous peptides and proteins are important nutrients in milk participants various biological processes. In the present study, we compared endogenous parent bovine from different lactation stages using 4D label-free technique. were identified by database search or de novo analysis. Through searches, matched 10186 milk, which derived 1147 proteins. By analysis, a total of 1991 peptides. Among these peptides, 4852 differentially expressed (DEEPs) between colostrum (BC) mature (BM) found with bioactivities, including ACE-inhibitory, immunomodulatory anticancer activities. Gene Ontology (GO) annotation showed that BC BM mainly structural molecule activity category within molecular function subgroup. The primary Kyoto Encyclopedia Genes Genomes (KEGG) pathway was related to ribosomes. These results reveal changes functions activities during provide novel insight into developing infant formula powder based on sources.

Donkey colostrum, due to its abundance of active ingredients, including lysozyme, proteins, and peptides, is essential for the growth immune defence newborns. However, research on endogenous peptides in donkey colostrum inadequate. This study analysed profiles their potential bioactivity, enzymes that generated these using two different strategies. A total 6202 were characterised through a database search, while an additional 2997 identified de novo. Among 1142 proteins identified, trypsin plasmin demonstrated highest bioactivities. Furthermore, bioinformatics-based screening antioxidant angiotensin I-converting enzyme inhibitory dipeptidyl peptidase IV as three most peptides. Gene Ontology (GO) annotation Kyoto Encyclopedia Genes Genomes (KEGG) pathway analyses conducted. These findings enhance our knowledge provide crucial information regarding nutritional factors future development functional foods derived from sources.

The destabilization of UHT milk during its shelf life can be promoted by the residual proteolytic activity attributed to protease AprX from Pseudomonas. To better understand hydrolysis patterns AprX, and evaluate feasibility using low-temperature inactivation (LTI) for release peptides through on proteins was examined an LC-MS/MS-based peptidomic analysis. Milk samples were either directly incubated hydrolyzed or preheated under LTI conditions (60 °C 15 min) then incubated. Peptides parent (the which originated) identified quantified. mapped cleavage frequency amino acids in P1/P1′ positions analyzed, after influence potential bitterness formed determined. Our results showed that a total 2488 48 proteins, with most abundant originating κ-casein β-casein. may also non-specifically hydrolyze other milk.
