In this study, a novel active film was developed by employing ε-polylysine (ε-PL) as filler in pullulan/curdlan (P/CD) composite (P/CD/ε-PL). The results showed that the structure of P/CD films more uniform and denser compared to pullulan films, due good compatibility intermolecular interaction between them. Among 6:1 improved hydrophobicity, mechanical barrier properties, thermal stability, thereby selecting it for further use. Thereafter, addition ε-PL enhanced structural physicochemical properties prepared P/CD/ε-PL especially P/CD/2.5%ε-PL film. It exhibited ultraviolet (about 80% at 200-400 nm), antibacterial activity (>90% against Staphylococcus aureus Escherichia coli), anti-fog (clearly visible transparent background). Furthermore, exerted its preservation effect on fresh-cut peppers kiwis during storage, delaying softening, consumption soluble solids, deterioration. Therefore, provided promising applications packing Practical Application: Fresh-cut fruits vegetables are prone deteriorate packaging play crucial role retaining their quality. This study conducted prepare blending pullulan, curdlan, explore structural, physicochemical, functional verifying kiwis.
