Pigment is one of the most important metabolites in red yeast rice. However, citrinin may accumulate and cause quality security issues. In present study, effect ascorbic acid (EAA) on pigment was studied, metabolic mechanism discussed using comparative transcriptomics. The introduction EAA increased by 58.2% decreased 65.4%. protease activity, DPPH scavenging rate, total reducing ability also 18.7, 9.0, 26.7%, respectively.
