The inclusion of by-products or discarded fruit in a second value chain can be strategy to contribute sustainable food production and consumption, with focus on following circular economy model, since certain may source nutrients compounds biological potential. objective this research was evaluate the content phenolic antioxidant capacity from five non-marketable grape varieties, as well bioaccessibility absorption their during simulated digestion, order support potential use sources health-promoting interest. ABSTRACT The goal of this study was to establish an efficient protocol for producing bioactive‐rich mushroom extracts food ingredients development. For this, fresh mushrooms were dried, ground, and submitted different extraction protocols—ethanolic (EE), fermentation‐assisted (FAE), or enzyme‐assisted (EAE). In addition, ultraviolet B (UV‐B) irradiation, coupled with the protocols, experimentally studied potential improvement bioactivity yields. yield (EY), (total phenolic content TPC, acids, flavonoids, antioxidant activity), α‐, β‐, total glucan contents, mineral evaluated. EAE yielded highest EY (26.48%–31.30%) while EE resulted in activity ( p < 0.05). β‐glucan (0.13%–0.93%) not affected by type UV‐B irradiation > All rich essential minerals low toxicity.
