Marshmallow candy is a well-known sugar-based confection that widely consumed among different population groups. However, its high sugar contents and low nutritive value might lead to adverse health outcomes. This study, therefore, aimed develop optimal formulations for functional marshmallow using honey, aqueous hibiscus extract, cow’s milk, strawberry concentrates with partial replacement of table glucose syrup. In this regard, six (F1–F6) were developed, varying in the ratios key ingredients, such as F1 formulated honey (9%), sucrose (35%), syrup (33%), milk (4%), extract (1%); F2 containing (10%), (30%), (25%), (1%), concentrate (13%); F3 (15%), (20%), (16%); F4 (24%); F5 (5%), F6 developed (16%) without or Hibiscus extract. These evaluated total phenolic content, flavonoid DPPH radical scavenging activity, textural sensory characteristics. The results show all ingredients had significantly higher contents, along stronger antioxidant activities dose-dependent manner compared control. Among formulations, exhibited highest flavonoids (89.8 mg GAE/100 g 1.62 RE/100 g, respectively) reducing power activity (197.8% equivalent 30 µg vitamin C). This study aimed to optimize the extraction conditions for a valuable source of antioxidants: seaweed. Therefore, ten seaweed samples were subjected solid–liquid (SLE), where (biomass (g): solvent (mL) ratio, temperature, and time) optimized using response surface methodology (RSM). Amid rapid advancements in artificial intelligence (AI), personalized recommendation systems have become a key factor shaping consumer decision-making functional food purchases. However, the influence of AI characteristics on purchase intention, particularly underlying mediating mechanisms, remains underexplored. This study aims to investigate how features (personalization and transparency), along with attributes (perceived health benefits perceived naturalness), intention through roles packaging value. Grounded Stimulus-Organism-Response framework, data were collected via structured questionnaire survey, structural equation modeling was employed for hypothesis testing model validation. The results indicate that personalization significantly enhances both directly indirectly, while transparency influences only value, emphasizing its role fostering trust rather than driving purchasing behavior. The use of autochthonous yeast strains from viticultural environments represents a novel approach in the brewing industry. Background/Objectives: Urinary incontinence (UI) is a common condition affecting women worldwide, with pelvic floor muscle training exercises (PFMT) recognized as the first-line treatment for UI. Supplementation bioactive compounds, such collagen and magnesium, may enhance effectiveness of PFMT. This study aimed to evaluate efficacy combining food supplement containing magnesium PFMT in experiencing stress (SUI), urge (UUI), or mixed (MUI) urinary incontinence. This study investigates the role of dietary modulation in shaping gut microbiota and its subsequent effects on metabolic regulation individuals with type 2 diabetes mellitus (T2DM). Over an 8-week period, participants were divided into four groups (CS, TS, CE, TE), TE group receiving a high-fiber diet designed to support diverse microbial growth. Analysis showed 24% increase richness group, achieving 235 observed OTUs at sequencing depth 30,000 reads, contrast 190 control (CS). The also exhibited Gini-Simpson index 0.88, indicating balanced ecosystem reduced dominance specific taxa, compared 0.72 CS group.
