Tremella fuciformis Berk., also known as white fungus and snow fungus, is one of the important edible medicinal mushrooms in China. The quality characteristics metabolites different T. varieties directly affect stability their processed products. In this study, two new fuciformis, namely ’TYH-SD1’ (yellow) ’TWH-SD2’ (white), which were obtained by team through single-spore crossbreeding its control Tr21 Tr01 used test materials. nutritional four substrates comparatively analyzed, while metabolomics was employed to investigate differences flavor substances. results demonstrate that TYH-SD1 TWH-SD2 had a higher rehydration rate faster speed compared with strains Tr01, smaller stem yield. Notably, 29.06% increase it contents crude polysaccharide vitamin D3. surface ear pieces exhibited porous structure larger pore size displayed characterized connected gully-like protrusions fewer indentations, significantly from pieces. textural analysis shows softer more elastic, greater cohesion recovery, indicating they high tensile deformation recovery ability. Metabolomics revealed relative content aldehydes volatile substances n-alpha-aldehyde, nonanaldehyde, n-pentanal. alkanes second only aldehydes, decane having highest content, contributing almond aroma, fruity fat aroma. concentration alcohols, accounting for 43.57%, may result clear, mushroom, lipid odor. above will provide theoretical basis further production, processing, application varieties.
