This study evaluated the efficacy of active packaging containing albumin (ALB) and pectin (PEC) cryogels loaded with pink pepper essential oil in preserving strawberries during 7 days storage at 4 °C. The were prepared different ratios (ALB:PEC 50:50 30:70) applied sachets within strawberry packaging, varying amounts from 0.4 g to 1.0 g. Analyses included evaluation mass loss, soluble solids, pH, titratable acidity, color, firmness, anthocyanin content, volatile compound composition release (GC-FID GC-MS), microbiological analyses. Results showed that maintained stability solids did not significantly affect color or content. Strawberry firmness was influenced by amount cryogel, ALB:PEC 30:70 cryogel’s best-preserving texture. A GC-MS analysis identified monoterpenes (α-pinene, 3-carene, D-limonene) sesquiterpenes (caryophyllene germacrene D) as major compounds oil, a controlled over time. Cryogels, especially 30:70, reduced count mesophilic aerobic bacteria (1 g) yeasts molds (0.4 g). formulation extends shelf life preserves quality through antimicrobial preservation.
