Abstract The seeds of bacupari, tucumã, and peach palm fruits have distinct characteristics that significantly influence their industrial applications nutritional value. These slightly acidic pH levels (5.88 − 6.79), indicating the presence organic acids. tucumã seed, for instance, stands out with a high lipid content 19.35 g 100 g−1, contributing to energy value, while bacupari seed has low (0.73 g−1). MPEA fraction showed a better NO effects than that MPE MPH, while MPH stronger those MPE, MPM TNF-α experiment. From most active (MPEA), eight (1-8) isolated column chromatography. Of which, quercetin (3), quercitrin (7), kaempferol (2), Luteolin 7 glucoside (8) potential anti-inflammation suppressing oxidase. Conclusions exhibited significant anti-inflammatory, antioxidant, showing it promising source developing medications targeting inflammation elevated levels. Its potentially pharmaceuticals conditions like gout other inflammatory illnesses.

Additives are used to improve bread quality; for this reason, lipase stands out, as it simulates the effect of emulsifiers. The present work aimed verify commercial addition on physical and technological characteristics bread. first stage 33 factorial design namely three enzymes, five concentrations, fermentation times. second 23 design, stored over 28 days, with two formulations (control enzyme) storage temperatures. PCA identified variables most significance in PC1: specific volume, related texture expansion. In (shelf life), revealed that samples enzymes formulation differed from control samples. Based circle correlations, enzyme were distinguished by lower chewiness, gumminess, hardness. Microscopic analysis showed starch molecules more uniform 14 days. However, lost their conformational structure afterwards. Therefore, incorporation improved bread’s parameters such texture, structure.

Abstract The black puçá (Mouriri Pusa) is an unconventional fruit from the Cerrado region of Brazil, commonly known as jabuticaba forest. However, data on its nutritional composition phytochemical are limited.
