Abstract Background This study utilized ultrasonication-assisted green extraction techniques to explore the physicochemical, rheological, biological, and prebiotic properties, alongside gut modulation abilities of novel polysaccharides extracted from date pomace. The aimed at enhancing utilization pomace, a by-product fruit processing, by investigating its potential as functional food ingredient. research focused on optimizing process, understanding complex structure polysaccharides, assessing their various health-related functionalities. Results ultrasonically (UPS) were identified mixture significant bioactive compounds including galacturonic acid, galactose, glucose, arabinose, fructose, showcasing high molecular weight 537.7 kDa. found that UPS exhibited outstanding antioxidant activities, with scavenging ranging 59 82% concentration 1000 mg/L.
