Exploring the Bioactive Potential of Mushroom Aqueous Extracts: Antimicrobial, Antioxidant, and Prebiotic Properties

Mushrooms
provide
essential
nutrients
and
bioactive
compounds,
namely
glucans,
protein,
phenolic
compounds.
In
this
study,
two
aqueous
extractions
were
performed
(M1
M2)
using
Pleurotus
ostreatus,
eryngii,
Agrocybe
cylindracea.
M1,
a
hot
extraction
(extract
M1)

rpm,

was
performed.

room-temperature

foodborne
bacteria
(only
M2A).

unlike
P.
ostreatus
at

mg/mL,

Abstract
Coix
seed
is
recognized
as
a
functional
medicinal
food
due
to
its
valuable
biological
activities,
with
polysaccharides
being
the
primary
active
compounds.
In
this
study,
an
ultrasonic‐assisted
enzymatic
extraction
technique
was
employed,
and
response
surface
methodology
used
optimize
yield
of
9.55
±
0.26%.

neutral
polysaccharide,
CSPsN‐1,
purified
molecular
weight
7.75

glucose,
