Selenium nanoparticles (SeNPs) have drawn considerable attention to biomedicine, the food industry, and cosmetics due their strong antioxidant potential low toxicity. However, poor stability limits broader applications. A promising strategy overcome this limitation involves combining SeNPs with polysaccharides. In study, selenium (MOLP-SeNPs) were synthesized using Moringa oleifera Lam. polysaccharide (MOLP) as a stabilizer dispersant within redox system comprising sodium selenite ascorbic acid. The structural characteristics of MOLP-SeNPs analyzed spectroscopy. Additionally, thermal storage was evaluated, activity explored through simulated digestion in vitro HepG2 cell oxidative stress model. results demonstrated that well-dispersed, zero-valent showing mean particle size 166.58 nm successfully an MOLP-to-sodium ratio 2.8:3 at pH 7.3 35 °C. exhibited excellent during preparation. H2O2-induced experiments on cells, displayed free radical scavenging capacity while improving activity. Cellular deeply revealed pretreatment significantly improved viability provided pronounced protective effect against damage. conclusion, represent novel applications biomedicine.

NVMEERKIK, a peptide derived from ovalbumin, exhibited remarkable immunomodulatory activity. This study investigated the effect of simulated gastrointestinal digestion on its structure and bioactivity. NVMEERKIK was found to be unstable against enzymes completely degraded into NVME, NVMEE, KIK, K, R. Among these, which constituted 90.90% digest, synthesized demonstrated superior immune-enhancing activity than NVMEERKIK. Specifically, NVME improved phagocytosis, NO production, TNF-α content in RAW264.7 cells by 1.31-15.86%, 17.17-122.08%, 0.36-16.76%, respectively. TLR4 inhibition immunofluorescence assays revealed strong activation recognition capacities both peptides. Furthermore, Western blot results showed that activated MAPK/NF-κB pathway upregulating ERK, JNK, p38, p65, leading enhanced cells. The after highlighted potential as an for functional food applications.
