Jujube (Ziziphus Jujuba Mill.) is an excellent medicinal and edible plant owing to its high nutritional health-promoting properties. As important bioactive component, Z. polysaccharides have aroused wide attention due their various pharmacological activities, including anti-inflammatory, immunomodulatory, anti-oxidant, anti-tumor, anti-viral, regulating gut microbiota, hepatoprotective effects prebiotic activity, so on. This review highlights the advancements in extraction methods, structural characteristics, elucidation, functional analysis of derived from fruits over past decade, aiming provide valuable insights for future development commercialization polysaccharides.
