Melanoidins are heterogeneous polymers with a high molecular weight and brown color formed during the Maillard reaction by combination of sugars amino acids at temperatures potential to inhibit microbial activity in bioprocesses. This study assessed impacts melanoidins on kinetic substrate conversion production organic via dark fermentation using consortia as inoculum. The investigations were carried out fed-batch reactors synthetic following glucose-to-melanoidin ratios (G/M; g-glucose g−1 melanoidins) 0.50, 1.50, 1.62, 1.67, 5.00, also considering melanoidin-free control reactor. results showed that negatively impacted kinetics glucose decreasing first-order decay constant (k1): when dosing equivalent initial concentrations (ca. 3 g L−1), absence led k1 0.62 d−1, whilst 2 L−1 (G/M = 1.5) 6.0 0.5) produced values 0.37 d−1 0.27 respectively. butyric acetic was melanoidins, lactic not impaired presence these compounds. Lactate reached ca. 1000 mg G/M no lactate detected demonstrated be selective metabolic driver, diversity compared reactor favoring growth Lactobacillus. The research aimed to enhance the shelf life of sugarcane juice through carbonation, employing different concentrations mixed with syrup. Treatments included T0 (100% juice), T1 (80% T2 (60% T3 (40% and T4 (20% juice). Physicochemical analyses encompassed color, pH, total soluble solids, titratable acidity, (pH: 5.2, solids: 18.5°Brix) showing significant values. However, exhibited most (p ≤ .05) results, suggesting its potential for shelf-life extension. Additionally, bioactive compounds such as ascorbic acid, phenolic, flavonoid contents were measured, demonstrating noteworthy levels. Antioxidant assays (DPPH: 65% inhibition, TFC: 45 mg QE/100 ml, TPC: 130 GAE/100 FRAP: 320 µmol Fe2+/L) highlighted effective, showcasing robust antioxidant activity. Sensory evaluation, conducted at refrigeration temperatures 4–10°C, favored T4, indicating superior acceptability. In conclusion, Carbonated T4) extends life, preserves quality, boosts antioxidants.
