High rehydration beverage consumption represents a significant opportunity for the integration of biotic products that offer potential to improve body composition and intestinal health. Quercus sideroxyla (IQS) infusions contain polyphenolic compounds with antioxidant anti-inflammatory properties, in combination probiotic strains prebiotic materials, they promising alternative generating designer beverages physically active people. These were formulated using IQS, agave fructooligosaccharides (FOS), microencapsulated probiotics Akkermansia muciniphila Bifidobacterium longum, electrolytes, glucose. Stable obtained by spray drying, gums (PD > 10) gum arabic as wall materials. The formulations generated different percentages FOS (A:1.6%, B:1.2%, C:0.8%). phenolic profile was determined LC-MS/MS, indicating difference concentration compounds, highlighting changes associated addition compared IQS. Sensory analyses indicate preference highest concentration. formulations, ABTS, DPPH, ORAC, showed no differences between drinks; however, positive correlation quinic acid, t-cinnamic quercetin 3-O-glucoside, total content, suggesting synergistic effect. drinks higher content exhibited (EMA). Therefore, it can be concluded rehydrating drink offers effect activity and, according panelists, is suitable evaluating its effects on health people who have recently started physical activity.

Clove (Syzygium aromaticum, L.) is a rich source of polyphenols and antioxidants, but its intense flavor, poor solubility, instability may limit widespread efficient use in industrial applications. In series laboratory-scale experiments, gum Arabic (GA) maltodextrin (MD) were used as coating agents various proportions (ranging from 0MD:100GA to 100MD:0GA) for encapsulation clove extract using freeze-drying method.
