High rehydration beverage consumption represents a significant opportunity for the integration of biotic products that offer potential to improve body composition and intestinal health. Quercus sideroxyla (IQS) infusions contain polyphenolic compounds with antioxidant anti-inflammatory properties, in combination probiotic strains prebiotic materials, they promising alternative generating designer beverages physically active people. These were formulated using IQS, agave fructooligosaccharides (FOS), microencapsulated probiotics Akkermansia muciniphila Bifidobacterium longum, electrolytes, glucose. Stable obtained by spray drying, gums (PD > 10) gum arabic as wall materials. Clove (Syzygium aromaticum, L.) is a rich source of polyphenols and antioxidants, but its intense flavor, poor solubility, instability may limit widespread efficient use in industrial applications.
