Alternative meat (AltMeat), which includes plant-based and cultured meats, has the potential to improve global food supply chain on numerous environmental societal dimensions. Some of these gains, derived from lower animal consumption, could disrupt crops that are used as feed. Novel agri-food technologies such as cellular agriculture present strong economic opportunities, with potential to reduce the environmental footprint of agriculture, improve animal welfare, and feed world. A rich body literature has emerged in past five years that evaluates those claims, illuminates diverse food system futures framed by novel technology actors across system. To date, characterizations rely mainly on public data, advertisements press releases, have yet engage deeply a broader suite social, economic, material pathways for their emergence. The need robust social scientific framework through which describe evaluate concrete is needed. In this paper, we draw from set fifty-two interviews 3 focus groups key stakeholders industry, academia, investment, research institutions. We found three considerations futures: understand places scales ‘happens’, balance competitive industry interests public-private collaboration, navigate extent interfaces traditional agriculture. From these considerations, deduce dimensions technologies, broadly: centralization, access, integration. Plotting variables assumptions, preconceptions, enabling conditions may engender more or less desirable futures.

This study aimed to quantify and evaluate the main environmental impacts generated in each phase of tofu production as well its co-products (soy milk, food integrators, etc.) by-products (straw, hulls, from organic conventional soybean cropping compare them with protein sources (e.g., livestock meat snails). Abstract Despite the growing interest in innovative nonanimal protein‐prepared foods, knowledge about consumer demand for these newly prepared foods and their potential scope market could be improved. This study reports results of a discrete choice experiment on consumers’ ( n = 1245) willingness to pay (WTP) plant‐based meat (PPBM) context Chinese food culture. Consumers were randomly assigned treated group with additional environmental information PPBM. The estimation random parameter logit model showed that when was provided, preferences WTP frozen meatballs mixed (beef‐based soy protein–based meat) PBM (pure significantly increased. However, preference quality safety attributes decreased. Simultaneously, availability reveals heterogeneity preferences. found positive PPBM limited consumers low degree technology neophobia (FTN) high FTN may avoid purchasing made from PBM. In contrast, higher time (i.e., impatient consumers) likelier meatballs. Practical Application is especially valuable developing China has become largest market.
