Despite increasing awareness, food loss and waste in supply chains remains a significant challenge resulting environmental risks ethical concerns, shaped by the conflicting logics of abundance scarcity. Systemic overproduction, driven high-quality demands perishability fresh food, underscores need for new approaches to procurement. This article explores relationship between public procurement processes fruit vegetables Denmark. Two major Danish wholesalers Copenhagen municipality's agency formed empirical basis an ethnographic study undertaken 2020 2023. The involved participant observation at wholesalers, semi-structured interviews, informal conversations with broad range actors across chain. Findings revealed that quality requirements guide everyday practices assessment, both contractually culturally, are being pushed limits what growing seasons, shelf-life characteristics distribution systems can accommodate. results where produce is still usable thrown away. emphasizes novel understandings parameters order (re)design structures process so reducing be adopted as regulatory tool within contracts.
