Ultrasound has been widely used as a green and efficient non-thermal processing technique to assist with enzymatic hydrolysis. Compared traditional hydrolysis, ultrasonic-pretreatment-assisted hydrolysis can significantly improve the efficiency of enhance biological activity substrates. At present, this technology is mainly for extraction bioactive substances degradation macromolecules. This review focused on mechanism assisted by ultrasonic pretreatment, including effects pretreatment enzyme structure, substrate kinetics, thermodynamics conditions results. The development status devices application ultrasonic-assisted in food industry are briefly described study. In future, more attention should be paid research ultrasound-assisted promote expansion production efficiency.

In order to address the issue of lotus root's challenging washing process and remnant contaminants such as sludge microorganisms during washing, this study evaluates effect an innovative method ultrasonic combined bubbling-assisted low-concentration peroxyacetic acid (PAA) on root. Single/multifrequency ultrasound, PAA concentration, time, combination sequence soaking, bubbling were explored. Moreover, effects physicochemical quality root decontamination mechanism under analyzed. The results showed that soaking before both was effective in reducing surface microorganisms. Decontamination with 0.04% can effectively sterilize more than 90% all bacteria. Combination bubbling, low concentration most (sterilizing decontaminating). treatment increased total phenolic content (TPC) by 16.4% antioxidant activity (DPPH, FRAP) 13.5% 28.7%, whereas detrimental retention TPC active compounds Furthermore, ultrasound produced greater damage bacterial cell membranes better bactericidal effects.

This study focused on the adverse sonochemical effect of ultrasound biofilm extracellular polysaccharide and adaptive responses for resistance. Results showed triggered phase transition polysaccharides within from solation to gelation, which induced following viscoelasticity enhancement, consequential failure removal bacteria killing. Introducing additional cationic polysaccharide, 1.25 % chitosan, inhibited responsive gelation exerted synergistic antibacterial (97.40 %) antibiofilm (96.38 effects with 120 W combined S. aureus biofilm, prolonged preservation time milk 2.45 times longer compared alone. These findings indicated possible mechanism solution improve efficacy control suppression, exhibit promising prospect strategy in hygiene issues food medical industry.

ABSTRACT Peracetic acid (PAA) is being tested as an alternative to chlorine for sewage disinfection due its advantages, such the lack of byproducts produced and low impact on discharge site ecosystem. In this study, inactivating efficiency PAA against Clostridium perfringens, a known chlorine-resistant microorganism that also causes numerous foodborne illnesses, was evaluated in sewage. remained 80–90% after 120 min contact with sewage, while reduced 3%. The inactivation curve Escherichia coli showed linear decrease chlorine, stepwise reduction observed PAA. efficacy sulfate-reducing clostridia (SRC)-containing C. perfringens −2.41 log at CT value 3,025 mg·min/L. Among detected SRCs, −log estimated from percentage cpa gene positivity, higher than SRC −3.17 log. Although contained PAA-resistant non-C. clostridia, effectiveness presence organic matter indicates disinfectant.
