Grapes are prone to rot and deterioration during storage, seriously affecting their food value. The effects of five extracts, cinnamon, perilla, green tea, pomegranate peel, ginger, on the microbial growth, weight loss, sensory quality grapes were investigated using colony counting scoring methods. results showed that perilla cinnamon extracts had best effect maintaining overall freshness 35th day storage. scores 82 80, respectively, number microorganisms was below 6.13 log CFU/g. Further studies revealed combination with Ɛ-polylysine resulted in better inhibition reduced maintained grape quality, extended storage period 40 days. An analysis active ingredients both contained antioxidant antimicrobial ingredients, such as protocatechuic acid, coumaric aldehyde, rutin. extract also included luteolin apigenin, those pinocembrin epicatechin. These deduced have contributed preserving by plant extracts.
