oils
(EOs)
comprise

Their
beneficial
properties
have
been
mainly
related
to
the
presence
of
molecules
such
as
monoterpenes
sesquiterpenes,
among
others,
with

in
food
industry

promote
sustainable
production
beyond
organoleptic
boosters.
This
review
collects
up-to-date
information
concerning
EOs
their
applications
