This
study
focused
on
improving
the
extraction
of
anthocyanins
from
medicinal
plants
using
green
solvents,
which
is
important
for
food,
pharmaceuticals,
and
cosmetics
industries.
The
goal
was
to
optimize
time
(15-50
min),
temperature
(40-80
°C),
petal/solvent
ratio
(2.5/7%)
ultrasound-assisted
Butterfly
Pea
(Clitoria
ternatea),
a
natural
deep
eutectic
solvent
(choline
chloride/glycerol,
ChCl:Gly).
compared
with
simple
water
extraction.
To
assess
stability,
we
analyzed
anthocyanin
content,
antioxidant
capacity,
color
changes
over
21
days.
optimal
results
were
achieved
80
°C
50
min
7%
ratio.
CHCl:Gly
resulted
in
higher
levels
(374.65
mg
DGE/L)
(211.63
DGE/L).
After
storing
extract
at
5
°C,
only
16%
lost,
while
lost
38%.

better
capacity
(156.43
µmol/mL).
Color
less
noticeable
extract,
especially
when
refrigerated.

Abstract
Anthocyanins
are
natural
pigments,
known
for
their
antioxidant,
anti‐inflammatory
properties,
and
health
benefits.
One
method
to
extract
anthocyanins
uses
deep
eutectic
solvents
(NADES).
NADES
mixtures
of
two
or
more
compounds
that
result
in
a
liquid
with
lower
melting
point
than
any
its
individual
components.
nontoxic,
biodegradable
can
be
obtained
from
renewable
sources,
making
them
an
attractive
alternative
traditional
solvents;
therefore,
they
as
the
“21st
century
solvents.”
This
review
provides
comprehensive
critical
assessment
use
sustainable
solvent
system
extraction.
It
also
discusses
main
properties
anthocyanins,
NADES,
process
parameters,
economic
environmental
analysis
efficiently
anthocyanins.
Current
state
knowledge
focusing
on
applicability
within
industrial
context
was
evaluated
identified
gaps
knowledge,
highlighting
advantages
challenges
provide
recommendations
future
research.
